Why this recipe works

Ripeness does all the work. Green plantains will not caramelise, no matter how long you fry them.

Ingredients

Equipment: Frying pan, Slotted spoon

Method

  1. 1Peel the plantains and slice on a diagonal about 1.5cm thick.
  2. 2Heat 1cm of oil to a medium heat โ€” not hot.
  3. 3Fry in batches 3 minutes a side until deep gold at the edges.
  4. 4Drain on paper and salt immediately.

Chef tips

If they brown in under two minutes the oil is too hot and the inside stays raw.

Substitutions

Overripe bananas are not a substitute โ€” they fall apart.

Storage

Best eaten immediately; they soften within an hour.

Reheating

Crisp them back up for 4 minutes in a hot oven.
