Why this recipe works
Ripeness does all the work. Green plantains will not caramelise, no matter how long you fry them.
Ingredients
- โขPlantains
Equipment: Frying pan, Slotted spoon
Method
- 1Peel the plantains and slice on a diagonal about 1.5cm thick.
- 2Heat 1cm of oil to a medium heat โ not hot.
- 3Fry in batches 3 minutes a side until deep gold at the edges.
- 4Drain on paper and salt immediately.

Chef tips
If they brown in under two minutes the oil is too hot and the inside stays raw.
Substitutions
Overripe bananas are not a substitute โ they fall apart.
Storage
Best eaten immediately; they soften within an hour.
Reheating
Crisp them back up for 4 minutes in a hot oven.
